I was playing in the kitchen last night, with a craving for tapioca pudding, and made the most amazing, simple dessert — Chia Coconut Pudding!
If you use stevia, this dessert is completely sugar-free. It’s creamy and dreamy, and I think you’ll love it. Here’s how I made it (and it only takes 5 minutes):
Chia Coconut Pudding
Yield: 2 servings
- 3/4 cup lite coconut milk (1/2 can)
- 3 tablespoons chia seeds
- 2 tablespoons maple syrup or 4 drops liquid stevia.
- 1/4 teaspoon vanilla extract
- pinch salt
Put all the ingredients in a pint-size mason jar, and screw on the lid. Shake well. Chill for at least 1 hour before serving.
