My Favorite Savory Breakfast Recipes

Today I want to share some of my favorite savory breakfast recipes.

Now, I generally love fruit and green smoothies for breakfast. But there are days when I don’t want to eat anything sweet in the morning.

Sometimes that’s just because my tastebuds need a change of pace. Other times, I’m avoiding all sweets for a while, including fruit.

And then there are days when I simply want to start off by having as many greens as I can because greens are just about the most energizing and nutritious foods you can eat.

You probably have days when you want a savory breakfast for one reason or another.

So, here are some of my favorite savory breakfasts, all of which happen to be raw!


Super Green Juice

Yield: 4 cups, 2 servings or 1 large serving

bfast1Don’t worry about a bitter taste—the celery, cucumbers, and romaine lettuce keep this juice gentle.

Ingredients

  • 1 head celery
  • 8 leaves (about 1/2 large bunch) kale or collard greens
  • 2 cucumbers, unpeeled and sliced lengthwise
  • 4 cups spinach leaves, firmly packed
  • 1 head romaine lettuce, sliced lengthwise to fit your juicer
  • 1 lemon, peeled

Juice the celery, kale, cucumbers, cucumbers, spinach, romaine lettuce, and lemon. Serve immediately, or store in the refrigerator to drink throughout the day.


Lean and Green Smoothie

Yield: 3 1/2 cups, 2 servings

I call this smoothie “lean and green” because it has more greens and less fruit than many of the other recipes. Get ready for some serious green energy! The only fruit is 1/2 apple per serving and a touch of lemon. Even without much fruit, the smoothie still tastes great—fresh, clean, with just the subtlest hint of sweetness.

Ingredients

  • 1 cup water, or 1 cup ice plus 1/2 cup water
  • 1 apple, unpeeled and chopped
  • 1/2 cucumber, peeled and chopped
  • 2 stalks celery, chopped
  • 1/2 lemon, peeled
  • 3 1/2 cups stemmed and chopped greens, lightly packed
  • 1/2 cup chopped fresh parsley, mint, or cilantro

Put all the ingredients in a blender and process on high speed until smooth.


An Avocado Half

Okay, I know this is too simple to be considered a recipe. But it’s the perfect quick breakfast—especially when you’re traveling!

Just cut an avocado in half, sprinkle it with a little salt and lemon or lime juice, and you have a savory breakfast in a pinch that’s satisfying and healthy.
